Observation (CORRECTED DURING INSPECTION): Knife noted stored in the gap between the front of house refrigerator unit and cash register cabinet.
Corrective Action(s): **This is a repeated violation** Issue was corrected at the time of inspection. Knife was removed and asked to be cleaned and sanitized before storing away. Do not store anymore utensils in an area that is hard to clean or cannot guaranteed the cleanliness of the cleaned utensils.

212 - Operator has not provided acceptable written food handling procedures [s. 23]
Observation: Sous vide of pork belly noted during the inspection. Temperature is not being monitored or recorded. No updated Food Safety Plan was submitted for approval prior to starting this process.
Corrective Action(s): Provide food handling procedures including temperature logs for sous vide. See BCCDC guidelines for temperature recommendations and critical control points.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Buildup noted on the floor by the front of house handwash sink.
2. Buildup noted on the door handle and interior wall and floor of the walk-in cooler.
3. Stain noted on the tube in the ice machine.
Corrective Action(s): Clean and sanitize the aforementioned areas and maintain in a sanitary condition at all time.
Although the stain on the tube of the rice machine cannot be removed, some buildup did come off with wiped with an alcohol swab. Please take this tube out for a cleaning and sanitation. Have this tube added to your sanitation list and clean often.

Routine inspection conducted today:
Handwash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigerator units were at 4C or below.
All freezer units were at -18C or below.
Improvement noted in the general storage hierarchy in the cooler units (meat is stored below and away from produce and ready-to-eat food). Food in the walk-in cooler are all stored covered/ protected - excellent.
Any food not in active use, such as those stored in the freezer, should also be properly protected with cover/ lid/ plastic wrap.
Rice was holding in the rice cooker at 73C.
General cleanliness has improved significantly - no dark, encrusted stain noted along the cookline. Fume hood and deep fryer noted sanitary.
200 PPM chlorine residual detected in the sanitizer spray bottle in the cooking area.
High temperature dish machine was noted with a final rinse temperature of 72.2C at the plate level during the rinse cycle.
Mop bucket was noted emptied - excellent.
No signs of pest activities noted during the inspection.
