Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution in spray bottle was still too strong, bleaching out the test strip.
Corrective Action(s): Diluted at time of inspection. Ensure to mix 1/2 tsp (2.5 mL) of bleach per Litre of water for proper concentrations. Sanitizer concentrations that are too strong can chemically contaminate food.

Comments

- Low-temperature chemical dishwasher in the kitchen achieved final rinse of 100ppm chlorine residual, detected at the dish surface. Good. Test strips available for monitoring.
- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels. As discussed, ensure paper towel is stored in dispenser at hand sinks.
- Hand sink faucets were clean and free of food debris at time of inspection.
- Food preparation sink was observed to be clean at time of inspection.
- Ventilation canopy filters have been cleaned. Ensure to clean on a weekly basis or more frequently as needed.
- Food items stored in walk-in coolers, prep coolers, and freezers were properly covered. Good.
- Food stored in food-grade containers/wraps only. Operator has ordered additional food storage bins.
- Dry ingredient food storage bins and lids have been cleaned and sanitized.
- Proper scoops are now being used (no porcelain or other breakable materials). *Reminder to store scoops with handles NOT touching the food. Store scoops in designated holders or wash and sanitize after each use.
- Temperature logs are now in place. Ensure to keep temperature records up to date.
- Operator has begun re-organizing and de-cluttering in storage areas. Good - please continue with re-organizing efforts.
- Deep cleaning in hard-to-reach areas has been completed.
- Mop bucket was stored upside-down at mop sink and did not contain dirty mop water. Good.
- Area around hot water tank was maintained in a sanitary condition.
