Recommendations:
- Operator currently uses 0.5 tsp of bleach per litre of water for disinfection. Due to multiple individuals being in the kitchen, you may wish to consider using pre-packaged food-grade quaternary ammonium sanitizer wipes so that individuals do not erroneously add too much bleach to sanitizer bottles.
- Although dishwasher did reach 72.6 at the plate, the temperature did fluctuate above and below 71C in subsequent rinse cycles. Call in a technician to ensure that the manifold reaches a minimum temperature of 82C, and confirm that the dishwasher can consistently reach a temperature of 71C after servicing has been completed. If the dishwasher cannot reach 82 at the manifold or 71C at the plate, you must use the two-compartment sink method of sanitizing. Confirm sanitizer concentration is at 100 ppm bleach (0.5 tsp per litre or 1 tsp per gallon of water).
