Observation (CORRECTED DURING INSPECTION): Cooked beef was stored in a plastic container with the cover on and at 30C. Beef was made approximately 1.5 hours ago.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. To rapidly cool foods, place foods in shallow trays and leave the container partially open to allow steam to escape.

Observation (CORRECTED DURING INSPECTION): Staff member was peeling onions in the storage space beside the cook area.
Corrective Action(s): Food preparation is to be carried out in designated food preparation areas, which are equipped with handwash stations supplied with hot and cold running water, liquid hand soap, and single use paper towels. Immediately cease food preparation in this storage area.

Observation (CORRECTED DURING INSPECTION): Two bags of fried chicken were found in the facility. Facility does not have frying equipment and staff stated the food is used for catering events. Initially staff stated the food was made at home. Staff then stated food is purchased from another location, but they did not know where.
Corrective Action(s): All foods must be from approved sources. Foods must either have the original store label or invoices are required to confirm foods are from approved sources.

Observation: Fruit flies were found in the storage area.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition to prevent pest infestation.

-Freezers ranged from -7C to -20C.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach tested at 100ppm.
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach spray bottle labelled and tested at 200ppm.
-Washroom clean and sanitary.
-General sanitation satisfactory at the time of inspection.
-FoodSafe Level 1 valid for staff (all three staff)
