*Continue to clean and sanitize rice scoops stored at room temperature every 4 hours. Also clean and sanitize rice scoop containers every 4 hours. Monitor using a timer.
*Ensure rice noodles are prepared according to manufacturer's instructions.

- Handwashing stations supplied with hot and cold running water, liquid soap, and single use paper towels
- All refrigeration unit holding food at 4C or colder
- Foods being hot held at 60C or hotter
- Sanitizer solution in wiping cloth buckets measured at 200ppm QUATS residual - change solution every 2-4 hours or as needed
- Sanitizer solution in three compartment sink measured at 200ppm QUATS residual.
- Accurate thermometers present in all coolers
- General sanitation is good
- Grease interceptors covered with cleanable tile section flush with the floor - monitor area for dirt/debris accumulation and remove tile piece to clean.
