-Follow-up inspection to May 25, 2016.
-Hot potentially hazardous foods are cooling on a cooling pan in thin layers and is then transferred into the cooler unit. Foods were probed at 4C.
-Sanitizer pail was properly labelled and tested at 200ppm. Ensure pail is changed every 2 to 4 hours, depending on usage.
-Ingredients were properly stored off the floor at the time of inspection.
-Scoops were found to be stored in a sanitary manner.
-Carpet has been removed from the sushi area and cardboard has been removed from shelving units.
-2-compartment sink has been cleaned and is no longer leaking water.
*Ensure staff are not diluting the liquid hand soap with water - may affect the ability of the soap to lather properly.
