High temperature dishwasher in good working order; detected 75.5 C at plate level after final rinse cycle
QUAT sanitizer available; detected 200 ppm of QUAT
All coolers at 4 C or lower; all freezers at -18 C or lower.
Hot holding unit not used at the time of inspection. Ensure to heat them to 60 C prior to adding any hot foods in.
