Observation (CORRECTED DURING INSPECTION): Three buckets of bleach sanitizer all had wiping towels submerged inside but only measured 50ppm bleach.
Corrective Action(s): 100ppm bleach is required for food contact susrfaces. Obtain test strips and remix solution frequently. Staff emptied sanitizer and remixed onsite. Ensure separate buckets used for meat area and produce area.

Observation: Cardboards still being used as back splash for meat cutting area and to line floors. Operator informed that owner has ordered proper boards already. Operator removed cardboard backsplash immediately.
Corrective Action(s): Remove cardboards, replace with slip resistant rubber mats to line floors. Install proper back splash boards after consulting with EHO if material is adequate asap.

Comments

Thermometer replaced in fridges; temperature of meat cooler remained at 0C.
Sprouts stored in cooler.
All noted food products lifted off the floor with rack underneath.
Cleaning done in the coolers.
Knife with duct tape discarded and replaced with working one; no tape noted.
Wooden knife holder for meat and wall mount stainless steel knife holder for produce.
All staffs with longer hair had restrained hair.

A Plus Pest control report reviewed but only for Nov; request for more reports for review.
Discussed separating processing area into meat department and addition of handsink to facilitate handwashing and more cleaning. Please arrange to come in office to discuss requirements.
Will let you know regarding perforated requirements around mushroom asap.
