200 ppm quat sanitizer buckets in use.
Stand up cooler 1 at 4.0C bacon.
Ice machine is sanitary with dedicated scoop.
Hot holding units at 60C or above.
Walk in cooler at 2C raw chicken.
Walk in freezer at -17C deep fried pickles.
Temperature monitoring and logs in use.
Staff demonstrate good personal hygiene and safe food practices.
