Observation (CORRECTED DURING INSPECTION): Sanitizer pail had approximately 50ppm to 100ppm chlorine. Surface of sanitizer was covered in white material.
Corrective Action(s): Sanitizer must be maintained at 100ppm to 200ppm to properly sanitize food contact surfaces. Sanitizer was replaced with 200ppm sanitizer at the time of inspection.

Observation (CORRECTED DURING INSPECTION): One tray and one container of cooked chicken were stored below a bucket of raw chicken.
Corrective Action(s): Raw foods must be stored below and separately from ready-to-eat foods to prevent potential contamination of foods. Cooked chicken was relocated at the time of inspection.

Observation: Vent canopy had grease accumulation.
Corrective Action(s): Ensure canopy is cleaned on a regular basis to prevent grease accumulation - this may result in pest attraction and is a potential fire hazard.

Observation: Faucet hose for the 3-compartment sink was leaking water.
Corrective Action(s): Service leaky faucet. All equipment must be maintained in good working order.

Comments

-Upright cooler (single door) was at 4C.
-Bark upright cooler (single door) was at 4C.
-Upright cooler (double door) was at 4C.
-Under counter cooler was at 4C.
-Front display cooler was at 4C.
-Chest freezers (three units) ranged from -20C to -24C.
-Hot holding of gravy was greater than 60C. Hot holding cabinet currently not is use.
-Cooked chicken cooled rapidly in the freezer, prior to placing into the cooler - chicken made the previous night was at 4C.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach sanitizer tested at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Equipment was generally clean and well maintained.
-Ice machine was clean and sanitary.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towel.
-FOODSAFE Level 1 valid until May 11, 2024.
