Observation: Curries, sauces and rice kept overnight in the walk-in cooler were measured to be around 12 degC.
Correction: All these foods were discarded. Do not store PHF's in the walk-in cooler until it has been repaired.

On Follow-Up:
The walk-in cooler has been repaired. Air temperature is 2 degC. Foods in the cooler were probed to be below 4 degC.
A temperature log is being maintained.
The lid for the rice bin is on order.
A new rice cooker is on order.
The orange red 'Bush' brand dye has been discarded.
