Coolers operating at </= 4C
Freezers operating at </= -18C
Pizzas under heat lamp around 40-50C and 1.5 hour time control. Discarded after 1.5 hours.
Temperature records maintained for coolers and freezers
Quats sanitizer dispenser at 200 ppm for 3-compartment manual warewashing. Test strips available. Quats in spray bottles.
General sanitation is excellent
Foods stored covered and 6" off the ground
No signs of pests observed
