Observation (CORRECTED DURING INSPECTION):
- QUAT sanitizer read 400ppm on test strips - this is too strong.
Corrective Action(s):
- Ensure correct mixing ratio is used when mixing the concentrate with water. Educate all staff regarding the mixing ratio.
- Equip an extra spray bottle of QUAT inside the processing room and at least one spray bottle of QUAT by the processing area at the shop. Employees should be cleaning and sanitizing meat processor machines every 4 hours minimum.

Observation:
- Droppings observed in all areas except coolers, freezers and the processing room.
- Biweekly monitoring by professional pest control company - recent report from March 18th indicates mice catches throughout the premises.
Corrective Action(s):
- Clean and sanitize all corners and edges of wall. Areas of concern include: mop sink, dry storage area
- Follow recommendations noted in the pest control report.

Observation:
- Mould observed on the ceiling next to the fan unit inside processing room.
- Ice build up observed in the small walk-in freezer.
- Debris build up observed on the bottom freezer doors at the store front. Stains and hand marks observed on the freezer doors.
Corrective Action(s):
- Remove the mould.
- Remove the ice build up.
- Clean freezer doors.

Premises is a meat processing plant that cuts and repackages various types of raw meat (poultry, beef, pork, lamb..etc). Store front offers meats for retail.
All hand sinks are fully equipped.
Walk-in cooler and processing room at 4C or below.
Reviewed manual ware washing procedures at time of inspection. Ensure equipment is 1. washed with soap/detergent and water 2. rinsed with clean water 3. fully submerged in sanitizer for 2 minutes in 200ppm quat and 4. air dried.

*It appears that open cooler units (at the retail side) are getting old and the outer paint coat is start to peel off - address this issue by repairing or replacing the unit in near future.
*All floors will be checked during the follow up inspection - including office, change room, lunch room etc. Ensure a thorough deep cleaning is conducted throughout the facility.
