Observation (CORRECTED DURING INSPECTION):
QUAT sanitizer in spray bottle = 50 ppm.
Corrective Action(s):
Refill QUAT sanitizer in spray bottle daily and ensure concentration is maintained at 200 ppm. If concentration decreases, then refill bottle again. Test strips are available onsite to check sanitizer level.

Routine Inspection:
Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- All coolers maintained at or below 4 degrees Celsius.
- Walk-in freezer = -20.4 degrees Celsius.
- All hot holding units (meatballs, soups) maintained above 60 degrees Celsius.
Temperature records well maintained.
General food storage practices very good:
- Food items are covered and protected from contamination.
- All prepared food items are dated.
- Dry storage shelves well organized.
- All food items stored off the floor.
QUAT sanitizer at dispenser = 200 ppm.
3-compartment sink used for manual warewashing.
No signs of pest activity at the time of inspection.
General cleanliness and maintenance very good.
