209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
1) Expired tofu was found (Mar. 15/19) in the walk in cooler. The product is unsafe to consume.
2) Staff are storing personal items (coats, bags, etc) with and/or beside food items in the dry storage/staff room. This practice has been mentioned in past inspections and this practice could contaminate the food.
3) Found uncovered containers of food (sugar, etc.) in the dry storage room. The foods can be contaminated.
Corrective Action(s):
1) Immediately discard the tofu. During the inspection, the tofu was thrown away.
2) Inform staff to store their personal belongings in the designated areas, away and separate from food. It is recommended that small lockers or cubbies be stalled to encourage this behavior.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Food stains found on walls in the dry storage room and kitchen, and on the sides of equipment. Minimal food debris found under racks, shelves, pallets, and around legs of equipment & racks. This will attract pests. Mice droppings found in the corner by the entrace door to the kitchen, from the loading area.
Corrective Action(s):
Wash these areas with hot water & soap, and sanitize. More frequent, detailed cleaning is needed to address these problem areas.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) Found plastic food bins and lids with cracks and chips. These bins and lids are not cleanable; bacteria will live in the cracks; and there is a possibility that pieces of plastic could fall into food.
2) The drain pipe under the 2-comp sink, in the drink jug washing and filling area, is leaking. Water is pooling on the floor which will harbor pests.
Corrective Action(s):
1) Immediately throw away any damaged food bins and lids, purchase new ones. Ensure to inspect equipment, bins, and utensils on a daily basis for damage.

2) Immediately repair or replace the pipe so it no longer leaks. Ensure the pooling water is mopped up more frequently.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; thermometers present; and temperatures recorded daily.
- High temperature dishwasher rinse cycle temperature was 71.9C at the plate's surface, as per max/min thermometer.
- Quats sanitizer solution used to sanitize surfaces. It was 200ppm concentration.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; labeled; date coded; stored in groups with raw proteins on the lowest shelves; and stored 6" off the floor on shelves, racks or pallets.
- FIFO rules being followed.
- FS certified staff present. Staff and Manager possess a valid certificate for a recognized, equivalent course (TrainCan BASICS.fst 3rd edition, and TrainCan ADVANCED.fst 3rd edition).
- Monthly contract with Abell Pest Company to monitor for pests, is in place. Ensure all recommendations made by the pest technician are followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- The exhaust canopies were professionally cleaned in March 2019. A service sticker has been placed on the equipment with the next cleaning date.
- The ceiling tiles have been cleaned. The floors have been scrubbed. Past violations have been addressed.
