Comments

-Walk-in cooler was at 4C.
-Pizza prep cooler was at 4C to 5C (top and bottom). Lunch rush was just completed.
-Service area cooler was at 4C.
-Chest freezer was at -16C.
-No hot holding at the time of inspection. Operator is maintaining detailed records regarding storage of pizza at between 4C to 60C. Records indicate when the pizza was placed in the hot holding unit and when the pizza was sold out. Records also indicate days when the hot holding cabinet is not used. Records indicate pizza is not stored between 4C to 60C for more than 2 hours. Operator is doing a good job maintaining records for using time as a food safety measure.
-3-compartment sink was prepared with bleach at 100ppm.
-Bleach sanitizer spray bottles and pails were at 100ppm to 200ppm. Pails and spray bottles were properly labelled.
-Both handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Operator observed washing hands after returning to the facility and prior to handling foods.
-Dicer was in use at the time of inspection. Other equipment was found to be clean and sanitary at the time of inspection.
-General food storage practices good at the time of inspection. Foods covered and properly stored. Did not observe scoops stored in ingredient containers at the time of inspection.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until December 19, 2027.
