302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Deli slicer was found to have food residue behind the blade cover, on the arm, and under the sharpening guard.
Corrective Action(s): Ensure slicer is properly disassembled and cleaned and sanitized after each use to prevent potential cross contamination. Slicer was washed and sanitized at the time of inspection.

208 - Foods obtained from unapproved sources [s. 11]
Observation: Facility was found to have “Qaimer Buffalo Milk Velvet Dairy” without proper labels. Numerous packages of frozen foods were also found without proper labels. Operator was unable to provide invoices for the items.
Corrective Action(s): All food items must be from approved sources. Operator must either prior an invoice for the products or the products must be properly labelled. Foods from unknown sources were moved to the back refrigerators and freezers until a source can be determined. If foods are repackaged, the foods must be labelled with the name and contact information of the supplier, ingredients and potential allergens, and a best before date.

Observation: Bleach sanitizer was unlabeled.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing and or misuse of chemicals. Containers will need to be relabelled as needed.

Comments

-Walk-in cooler was at 3C.
-Meat display cases were at 3C and 4C.
-Customer area refrigerator units were at 4C.
-Customer area freezer units ranged from -11C to -16C.
-Back chest freezers were at -16C and -18C.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach and sink plugs available.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle was at 200ppm.
-Meat cutting surfaces sanitized every 2 hours.
-Meat saw and grinder sanitized every 2 hours and thoroughly cleaned and sanitized nightly.
-General sanitation good at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-Signature not required due to the COVID-19 Pandemic.
