Comments

Hand sinks supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Dishwasher final rinse cycle reached 50 ppm at the plate level.
Discussed cooling procedures. Recommend using ice wands for cooling meat sauce. Ensure that food is cooled from 60 C to 4 C within 6 hours or less.
