Observation (CORRECTED DURING INSPECTION): REPEAT VIOLATION. Further violation(s) may lead to enforcement action.
The following was observed: Vegetable debris observed on large and small vegetable slicers.
Corrective Action(s): Items were washed, rinsed, and sanitized at time of inspection. Ensure that all food equipment is disassembled, then properly washed, rinsed, and sanitized following each use.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): REPEAT VIOLATION. Further violation(s) may lead to enforcement action.
Observation: 1. Bar glass washer sanitizer jug was observed to be completely empty. No detectable sanitizer (iodophor).
2. One spray bottle labeled as "sanitizer" was tested at approximately 50 ppm quats.
Corrective Action(s): 1. New sanitizer jug was connected to line and glass washer was primed. Sanitizer concentration tested at 12.5 to 25 ppm iodine. All glassware to be resanitized. Staff rewashing and sanitizing glassware at time of inspection.
2. Sanitizer bottle was emptied and refilled at the dispenser. Sanitizer was tested at 200 ppm quats.

Comments

Follow up to Rpt # MBEK-BMBV45.
The following has been corrected:
Food observed to be stored in a manner that protects from potential contamination.
No food, equipment, or utensils observed to be stored in vicinity of / below grey water piping.
Two articles of clothing were observed to be stored in dry food storage area. Note: Dry food storage bins observed to be covered / no open or exposed food where clothing was stored. Clothing relocated at time of inspection.
Cabinet noted on previous report was removed; however, sink basin was still observed to be on site. Removed at time of inspection.
Discussed: Ensure back storage area remains tidy and organized at all times and designated staff personal item storage area remains easily accessible.
Chemical spray bottles observed to be labeled.
Quats dispensing at 200 ppm from dispensing unit at time of inspection.
