Observation (CORRECTED DURING INSPECTION): A large pot of broth was measured at an internal temperature of 15C. Broth was cooled overnight in the walk in cooler.
Correction: Pot of broth discarded by operator. Ensure foods are properly cooled to limit growth of potential pathogens and/or toxins. A poster with proper cooling instructions is available on site.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Several pots and containers of potentially hazardous foods (cooked meats, broths, soups) were stored at room temperature and were measured at internal temperatures of 18C to 47C.
Correction: The following items were discarded: 4 pots of soup/broth, beef (container), chicken (container). Items had been at room temperature for greater than 2 hours or for an undetermined length of time. Ensure potentially hazardous foods are not stored between 4C and 60C to limit growth of potential pathogens and/or toxins.

Observation (CORRECTED DURING INSPECTION): Operator stated that bleach is used with detergent during wash step. Operator unable to set up 3 compartment sink for manual ware washing.
Correction: 3-compartment sink was set up for manual ware washing with 100ppm chlorine available in third compartment. Follow directions in sanitation plan and on poster above 3-compartment sink. Ensure all dishes/equipment are re-sanitized to kill or inactivate potential pathogens.

Observation (CORRECTED DURING INSPECTION): 1. Raw shell eggs and a container of raw meat observed stored above vegetables in walk in cooler. No signs of leakage/contamination.
2. Open metal can of ketchup observed in walk in cooler.
Correction: 1. Items rearranged. Ensure raw animal products are not stored above ready-to-eat foods.
2. Can of ketchup discarded by operator. Ensure that once opened, the contents of cans are transferred to a reusable food grade container as the interior lining of cans may degrade upon exposure to air.

Observation (CORRECTED DURING INSPECTION): A box of partially frozen raw meat was stored at ambient temperature.
Correction: Box transferred to walk in cooler. Ensure that foods are thawed in a cooler at 4C or less, or under cold running water (for example) to limit the growth of potential pathogens.

Observation (CORRECTED DURING INSPECTION): Spray bottle containing unidentified liquid was unlabeled.
Correction: Spray bottle was emptied by operator. Ensure all chemicals, cleaners and similar agents are properly labeled to identify contents.

Comments

-Coolers at 4C or less. Thermometers available.
-Freezers at -16C to -18C.
-Hot holding internal food temperatures at 60C or more (rice cookers, soup on stove).
-Hand washing stations re unobstructed and supplied with hot and cold running water, liquid soap, and paper towels.
-Bleach water available at 100ppm chlorine in front and back areas in labeled spray bottles.
-No signs of pest activity.
-Ventilation canopy in clean condition.

Correction ORDER issued due to use of reusable dishware for customers and improper warewashing. Refer to copy of correction order for requirements to be met.

Follow up inspection to be conducted on July 26, 2019.
