Code 302 noted on Routine inspection # 258603 of Nov-28-2022 Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: No sanitizer in area. No 4-step dishwshing process followed. Correction: *Staff must be trained to properly follow the food safety practices - including dishwashing *Make sure sanitizer is available for use at all dish sinks. Date to be corrected by: Dec 3 2022 Code 302 noted on Routine inspection # RHEN-CP4TFG of Feb-16-2023 Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: Procedures for washing dishes at dishwasher are not correct. Staff are spraying all dishes with sanitizer and wiping off. Only one sink stopper available for staff to fill dish sinks. Correction: Review procedures for dishes with staff. Make sure all staff following proper dishwasher procedures for all dishes and dishware (excluding Clean In Place CIP). Three compartment signage in dishpit, just needs to be followed. Have at least three new sink stoppers available at follow up inspection (date noted on report)

Three sink dishwashing observed correct. Three sinks filled with soap and water, clean water and sanitizer (quats) at 200 ppm respectively. Good. Sink stoppers purchased. storage on grease trap discontinued. Thank you.
