Observation (CORRECTED DURING INSPECTION): Wiping rags stored directly on sushi cutting table. To prevent growth of bacteria on the wiping rags, they are to be stored in a sanitizing solution.

Observation (CORRECTED DURING INSPECTION): Hand soap was only available in one of the two hand washing station in the kitchen. Ensure all hand washing stations are equipped with liquid soap and paper towels at all times.

Comments

Routine inspection conducted and the following were noted:
Walk-in cooler and prep-coolers were at 4C.
Freezer units at -18C.
Chlorine dishwasher achieved a final rinse concentration of 100ppm. Operator is to obtain chlorine test strips from chemical supplier and test the unit daily to ensure it is in good working order.
No pest activity noted.
Food items properly covered within the cooler units.
Improper storage of raw meat above ready to eat products no longer observed.
Receipts available for sashimi products.
