Observation (CORRECTED DURING INSPECTION): 1. Dishwasher not sanitizing dishes with an adequate sanitizer concentration.
2. 2 sani bottles @ 0ppm chlorine.
Corrective Action(s): 1. Manual dishwashing method at 2 compartment sink was allowed until the dishwasher is fixed. Wash+rinse at the 1st compartment and sanitize at the 2nd compartment.
2. Ensure all sanitizer bottles contain chlorine level @ 100ppm or above at all time.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Noted a kitchen staff washing hands with gloves on.
Corrective Action(s): This is not an acceptable handwashing practice. Ensure to remove gloves and wash hands fully using liquid soap and paper towel. Always change gloves after handwashing.

Observation (CORRECTED DURING INSPECTION): The 2 compartment (prep sink) in the kitchen was being used as a cleaning sink. On-going infraction.
Corrective Action(s): The 2 compartment prep sink is a designated sink for washing food ingredients and defrosting frozen foods only. This cannot be used as a cleaning sink. This is an ongoing infraction. Repeating of the same violation will result in further enforcement actions taken by the health officer. The sink was cleaned during the inspection.

Observation: Noted a few number of flies in the dishwashing area.
Corrective Action(s): Remove the flies from the facility.
Also clean and sanitize the equipment surfaces and walls daily to keep the area free of pests. Given today to correct the issue.

Observation: Cleaning required in the following areas:
1. Walls and floor underneath the prep table beside walk in cooler
2. Corners of the stove/deep fryer.
3. Dishwashing area: walls and the equipment surfaces
Corrective Action(s): Clean the above area as per the sanitation plan. Remove excessive grease build ups, gunk and food debris. Given 1 day to correct.

Observation: Dishwasher (low temperature) chlorine level was not detected.
Corrective Action(s): Do not use the dishwasher until repaired. A technician was called during the inspection. The technician will visit the facility in 2 hours to repair the unit. Use single-use disposable cutleries and dishes only until the unit is repaired and approved by the Health Department.
