Observation: Food in dry food storage area is not suffiently protected from potential contamination by pests (rodent activity present). Several rigid containers with lids are in use for food storage; however, some containers do not have tight fitting lids or were observed to be left open, and some bagged food is not being stored in pest proof containers with tight fitting lids.

Ensure all food that may be susceptible to pest damage is properly stored in pest proof containers with tight fitting lids to protect against contamination. Date to be corrected by: October 27, 2023.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed along floor near the walls of the dry storage area.
Two dead rodents observed in one trap located near the cook line.
Corrective Action(s): It was stated that pest control is scheduled to service the kitchen area today. Dead rodents to be removed and trap reset. Pest control program in place on a bi-weekly basis; last pest control report dated October 10, 2023 was reviewed by the Environmental Health Officer. Follow pest control recommendations. - Potential entry points are identified and properly sealed against pest entry.
- Ensure proper cleaning and sanitizing is being completed on a regular basis. Ensure all surfaces, equipment, and utensils are protected from potential pest contact, or are re-sanitized at the start of each shift.
- Remove droppings from above-noted areas and sanitize with bleach (at least 1 part bleach to 9 parts water). Ensure hard to reach areas are properly cleaned and sanitized on a routine basis. Date to be corrected by: Today.
