Observation (CORRECTED DURING INSPECTION): Worker observed cleaning cutting boards and counters with cloth - no sanitizer. Cloths are kept out on counters between uses and prepared bucket of sanitizer had less than 10 ppm chlorine. Keep cloths in sanitizer at all times between uses. Change sanitizer often.

Observation: 1. Food items observed stacked one on top of each other without a protective barrier.
2. Raw beef in prep coolers is stored in an insert, piled high and immediately next to cooked meats. Raw meats are stored above ready to eat foods in the fridge.
3. Dry ingredients are stored in re-used food containers that are not easy to wash.
4. Broth in buckets cooling on floor was uncovered at start of inspection; then covered with colanders. Colanders have holes and are not protective (Broth temp was 67C).
