Observation: Upright, silver cooler on prep line contents measured at 8 to 10C. Only chopped veggies were stored here at the time of inspection.
Corrective Action(s): Operator noted that this unit is to be replaced in 7 days time. In the mean time, do not store potentially hazardous foods in the cooler.

- Ensure portions of rice held at room temperature are discarded after no more than 4 hours total at temperature between 4 and 60C
