Observation: Faucet at the hand washing station has a minor leak. Operator turned off the cold water to stop leak.

- Coolers (walk-in, prep, display) at < or = 4C
- Freezers (chest x2) at < or = -18C
- High temperature dishwasher is available. Final rinse temperature reached 72.8C at the plate level.
- Three compartment sink available for manual dishwashing
- 100 ppm bleach sanitizer available in bucket with wiping cloths
- Permit is posted in a visible location

*Obtain a waterproof probe thermometer with a max/min function to measure the temperature of the dishwasher. Ensure the dishwasher temperature is measured at least once per day and recorded in a log.
