Observation: Low temperature dishwasher had 10 ppm chlorine after several runs. The required chlorine level is 50-100 ppm. Fix within 2 days. A sanitizer solution was prepared at the 2-comp sink to be used in the meantime.

Inspection:
- All coolers were < 4C
- All freezers were < -18 C
- Sanitizer concentration had 272/704 ppm DDBSA/Lactic Acid
- Hot holding was > 60 C
- No evidence of pests.
- General sanitation was satisfactory

* Health Approval granted on the condition that the dishwasher is fixed within 2 days.
