Observation: Side counter in servery (for soup warmers and hot plates) is bare wood.
Corrective Action(s): All surfaces need to be made smooth, impervious to moisture and easy to clean. Discussed with operator that the bread display and front counter also needs to be made smooth, impervious to moisture and easy to clean.

Follow-up inspection.

Re-organization of premise is as per the layout that was approved on August 1, 2018.
All sinks equipped with hot and cold running water.
Hand sinks stocked with liquid soap and paper towels.
High temperature dishwasher had a final rinse temperature of at least 77.4 degrees Celsius (as per min/max thermometer).

Operator states the new location in Vancouver will not be open until November 2018 and full production of products will not transition fully to that location until early 2019.
Operator inquired if they may be allowed to serve food with reusable utensils. No concerns noted regarding the use of reusable utensils. Informed operator that if they decide to use reusable utensils, they will need to update their sanitation plan.
