Observation (CORRECTED DURING INSPECTION): Found wiping rags sitting in <50 ppm chlorine all other buckets had 200 ppm chlorine.
Corrective Action(s): Must keep wiping rags in 200 ppm chlorine, ensure to change bleach water every 2 hours or if heavily soiled.

Observation (CORRECTED DURING INSPECTION): Observed staff return from eating lunch wet hands for less then 10 sec, dried with paper towel and went to handle food
Corrective Action(s): Remind all staff of proper hand washing procedures (i.e. use warm water, with soap for 20-30 sec then dry). Also remind staff of when to wash hands (i.e. after returning from breaks, handling raw food or garbage cans).

Observation: Grease still built up under and around prep sink, and top of fish freezer.
Corrective Action(s): Continue to clean all hard to reach areas including the ones noted above.

- Food in back storage room was was reorganized so all items were off of the floor and all opened items were in pest proof containers.
- All spray bottles had 200 ppm,
- Reviewed pest control report: 1 mouse caught, continue to monitor to ensure no more mice are present.
- Duct tape has been removed from cooler door.
- Light cover has been replaced.
- All other items have been corrected
