Observation (CORRECTED DURING INSPECTION): Sanitizer solution for food prep surface not available. Operator had prepared 200ppm chlorine solution in a spray bottle at this time.
Corrective Action(s): Ensure to have 200ppm chlorine solution available at all times. Have all food prep surfaces sanitized using this solution before initiating any food prep in the morning, every 2 hours and after each possible contamination during operation.

- Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezer operating at/below -18'C.
- Temperature monitoring system in place.
- General food storage practice satisfactory.
- General sanitation satisfactory, other than mentioned above.

NOTE: Ensure to have all scoops stored in a sanitized container. Do not reuse single use containers as discussed at this time.
NOTE: Cooked tapioca pearls stored for <2 hours. Any leftovers should be discarded after 2 hours.
