Observation (CORRECTED DURING INSPECTION): One hand washing station lacked paper towels at time of inspection.
Corrective Action(s): Paper towels supplied. Ensure that at all times, hand washing stations remain accessible and adequately supplied with hot and cold running water, liquid hand soap, and single use paper towels in order to facilitate proper hand washing.

Observation (CORRECTED DURING INSPECTION): Open metal can containing tomato paste was observed within walk-in cooler.
Corrective Action(s): Can and contents discarded by operator. Ensure that all canned products, once opened, are immediately transferred to appropriate food grade containers and covered.

Observation: Pest droppings observed on premises, predominantly in dry storage area. Note: Pest proof containers with lids available for food storage.
Corrective Action(s): Affected areas were cleaned and sanitized at time of inspection. Potentially affected equipment/utensils in close proximity to droppings were placed in dishwasher to be washed and sanitized. One box of disposable container lids was discarded.

Continue to use pest-proof containers with lids, and ensure that lids are always secured tightly. Premises is serviced by a pest control operator--have premises re-serviced and provide most recent report for service and ensure pest control recommendations are followed. Ensure affected areas are cleaned and sanitized as often as necessary to remove potential contamination.

Corrective Action(s): Back door was closed. Dry storage area was cleaned during inspection. Ensure that door remains closed and is closed promptly after each use to limit potential pest entry. Ensure food spills are promptly cleaned and surfaces and equipment are cleaned as often as needed to limit accumulation of food, which is a pest attractant.
