Observation (CORRECTED DURING INSPECTION): Hot-held pizza was at 54 degrees C in the hot-holding unit. Operator stated that it was placed into it one hour ago after it was heated through the oven. Hot-holding unit was just under 60 degrees C / 140 degrees F.
Corrective Action(s): Hot-held pizza was reheated to above 74 degrees C in the pizza oven during the inspection and placed into the hot-holding unit. Operator increased the heat setting of the hot-holding unit.

Make sure pizza is hot-held at or above 60 degrees C. Alternatively, submit an updated food safety plan for time-tracking the pizza slices that are sold individually on-site.

Follow up inspection:
-A portable thermometer that was in good working order was added inside the walk-in-cooler.
-Food was covered and stored off the floor in the walk-in-cooler.
-Gap in the ceiling was no longer present above the ware-washing area.
-Cardboard boxes were not being used to store empty pizza trays.
-Empty pizza trays were being stored on trays as an interim measure. Operator still needs to obtain containers to store them that are made of easy to clean, non-asborbant, smooth, non-toxic, and durable materials.
