Observation (CORRECTED DURING INSPECTION): Several foods held in cooler inserts and squeeze bottles on the line registered above 10 Celcius on the surface.
Corrective Action(s): Cover high risk foods held in cooler inserts or move inside cooler to maintain 4 Celcius at all times.
High risk sauces held in squeeze bottles must be moved inside cooler if unable to maintain 4 Celcius.
Caramel foam held at room temperature must be discarded every 2 hours. Keep records to show when this is done.
