302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) Both chemical feed lines in low temperature dishwasher were both placed into buckets labelled as detergent, no connection to a sanitizer was present and hence no detectable level of sanitizer was present in dishwasher. Biofilm build-up also found in side of dishwasher at the water line. **This is a repeat infraction from the last routine inspection**
2) Mr Clean disinfectant being used as a disinfectant for food contact surfaces. The label states that if used on food contact surfaces, it must be rinsed off or it could contaminate the food. Further the label states that it is only effective against one type of bacteria (gram negative) and any sanitizer/disinfectant used must also be effective against all food pathogens (gram positive or negative).
Corrective Action(s): 1) Switch to using single use disposable plates/cups/cutlery for customers effective immediately, obtain a sanitizer for the dishwasher and ensure a 50ppm chlorine residual at all times. All other dishes may be washed in the dishwasher but must be manually sanitized in the sink, follow the instructions to make the sanitizer that are posted above the two compartment sink. Also add checking the sanitizer levels of the dishwasher to your daily monitoring sheet that is currently used for monitoring temperatures of coolers and freezers. Chlorine test strips present.
2) Discontinue using Mr Clean as a food contact surface sanitizer/disinfectant. Bleach available on site and 100ppm bleach solution made during inspection.
