305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Some water was present over the floor in the staff washroom. It was mentioned that there was a leak in the washroom and that they are making arrangements to have it repaired. No other areas of the food premises had a leak evident or accumulating water.
Corrective Action(s): Clean the washroom floor and mop up the water on the floor to keep it in a dry condition. Make the necessary repairs to prevent the leak; Correct as soon as possible within 2 weeks (November 7, 2019).

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following areas require cleaning to remove food debris:
1. Seals and inside surface of the prep. cooler.
2. Surface below the sliding glass door of the upright cooler in the back area.
3. Floor below the dishwasher, floor in the staff washroom, and corner next to the upright glass door cooler in the back area.
Corrective Action(s): Clean the aforementioned areas to remove buildup; Correct by November 10, 2019.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Thermometers were not available inside the prep. cooler and domestic white cooler.
Corrective Action(s): Staff member added a probe thermometer inside the prep. cooler in the interim. Please obtain a designated thermometer for thsi cooler; Correct within 1 week. Staff member added a thermometer inside the white domestic cooler (corrected).

Comments

Handsinks in the kitchen, front service area, and washrooms were supplied with liquid soap, hot and cold running water, and paper towels.
Coolers (prep. cooler, white domestic cooler, and both upright coolers) were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
Hot-held soup was at or above 60 degrees C.
200 ppm QUATS sanitizer was available in the spray bottles and from the dispenser.
Dishwasher final rinse chlorine sanitizer residual was at least 50 ppm at the plate.
No signs of recent pest activity were present at the time of inspection.
Two staff members on shift had valid FOODSAFE Level 1 certificates at the time of inspection.
Cooking and hot-holding temperatures were reviewed with the food handler: at or above 74 degrees C and at or above 60 degrees C respectively.
A probe thermometer was available on-site.
