Corrective Action(s): Seafood items are highly perishable. Move items to another fridge and only keep an amount that can be used in 1 hr in this fridge until the temperature is brought down to 4C or below.

Observation: The sushi display unit is too warm at 8-10C. A prep fridge in the kitchen is being kept empty as it is not working. A technician has been contacted.

Comments

The damaged wall surface behind the dish pit has been replace with one that is light colored nonabsorbent and easily cleanable.
The patch of floor at the entrance into the kitchen from the sushi bar is in the process of being refinished.
*Do not store containers of vinegar next to containers of chemicals such as cleaners. Store chemicals away food.
*Clean the floor in the kitchen dry storage area. Move pails out to clean under and around. Overall level of sanitation has improved.
*Check temperature of equipment each morning. Record on a log. Please email the first log sheet to me.
