-General sanitation of premises was satisfactory
-Handsinks supplied with liquid soap and paper towel. Observed frequent handwashing between staff. Observed measures in place to prevent cross contamination between raw and cooked chicken.
-All coolers 4C or colder
-Walk-in freezer at -7C. Unit was on defrost. Product was in a solid frozen state. Monitor to ensure temperature drops.
-Chicken, corn, mashed potatoes, gravy held at >60C
-Quats sanitizer used to sanitize dishes and food contact surfaces. Concentration of solution in sink and being used with wiping cloths was 200ppm.
-No signs of pest activity at the time of the inspection.
-Temperatures are being monitored and recorded. Records were up to date. Discussed documenting corrective action when temperature requirements are not met.
