Well maintained and operated. Sanitation is excellent. Refrigeration measures < 4 C. Freezer temperatures measure < -18 C. Triple sink sanitizer and spray sanitizer both measure 300 ppm Q. Dishwasher final rinse cavity temperature measures 71 C. No hot-holding at time of inspection. Satellite servery fridge temperatures measure < 4 C. Issues with accumulations of dust on the kitchen ceiling return air-vents and surrounding tile were discussed with the Director of Care. The company which is contracted to maintain the HVAC system will be consulted with to determine what solutions exist for correction of these ventilation problems. No recommendations.
