Observation (CORRECTED DURING INSPECTION): 1. Rice observed sitting in a deep plastic tray at time of inspection with a temperature of ~55C. According to operator, rice was cooked 1/2 hour ago.
Corrective Action(s): 1. Rice must be transferred to shallow containers for proper cooling from 60C to 20C in 2 hours, and from 20C to 4C within 4 hours. This process should be logged and documented. Improper cooling is one of the main causes of foodborne illness. For liquid mediums such as sauces, use an ice wand for rapid cooling.

Observation (CORRECTED DURING INSPECTION): 1. QUATS sanitizer concentration at >>> 200 ppm throughout facility.
2. Phone observed on cutting board area of prep table.
3. Containers inside bottom compartment of prep cooler left uncovered.
Corrective Action(s): 1. All QUATS spray bottles were refilled and measured at 200 ppm afterwards. Concentrations above 200 ppm may result in chemical contamination.
2. Phone removed. Cutting board to be cleaned and sanitized. Do not place any of your personal items on food contact surfaces. Phones can accumulate germs and are often in unsanitary condition. Placing phones on cutting boards will lead to cross contamination of your food.
3. Cover all food containers to protect them from contamination when not in use.

Routine inspection conducted. Facility is generally maintained in good sanitary condition. The following was noted at time of inspection:

1. Temperatures
- Walk-in cooler at 1C
- Walk-in freezer at -18C
- Prep cooler (left) at 3C (bottom) and 4C (top)
- Prep cooler (right) at 3C (bottom) and 4C (top)
- Beverage cooler (in take-out area) at 4C
- Sweets display cooler at 4C (see violation code above)
- Stainless steel sweets cooler unit (hallway area) at 4C
- Bar undercounter cooler at 4C
- Chicken exiting the oven reaches a temperature of 74C internally for 15s
- Temperature logs are maintained and up-to-date

2. Hygiene and Sanitizing
- Hand wash sinks in kitchen area, take-out area, and in restrooms stocked with hot/cold running water, liquid soap, and single-use paper towels
- High-temperature dishwasher sanitizes at a final rinse cycle of 76C at the plate (Min: 71C)
- Potato presser generally stored in good sanitary condition
- Ventilation canopy in excellent sanitary condition
- Ice machine in good sanitary condition. Scoop is stored separately above the unit
- Mop sink available for use. Appropriate splash guard affixed to the mop sink - good

3. Storage
- Food products are stored at a minimum of 6" (15 cm) off the floor
- Raw foods stored below cooked and ready-to-eat products in the walk-in cooler
- Reminder: All opened products to be stored inside containers with tight-fitted lids

4. Pest Control
- No signs of recent pest activity noted at time of inspection
- Mechanical traps throughout the facility did not contain any rodents
- Back door tightly shut when not in use
- Professional pest control company routinely audits establishment. Last inspection on Oct 21, 2019 by the pest control company revealed no signs of pest activity

5. Administrative
- Operator has FoodSafe 1 (expiry: 2023)
- Operator has now received the Operating Permit. It is posted at the front and up-to-date
