Handsinks equipped with hot and cold running water, liquid soap and paper towel
Bleach is available for sanitizing. All surfaces are wiped down with bleach at end of shift (shift is 3.5 hours). Cloths soak in bleach overnight.
General sanitation is good; no signs of pests observed
Coolers operating at </=4 C; Freezers at </= -18C; hot-holding rice at >/= 60C
Ventilation hood in sanitary condition. Due for professional cleaning in 1 month. Filters are removed and run through dishwasher regularly
High-temperature dishwasher reached 75C at the plate level upon final rinse cycle (min/max probe thermometer)
