Observation (CORRECTED DURING INSPECTION): No sanitizer available. Prep surfaces were sanitized last night, but not today. 200ppm chlorine was prepared in a spray bottle at this time. All prep surfaces are sanitized using this solution at this time.
Corrective Action(s): Ensure 100-200ppm chlorine solution is available in either a bucket to hold wiping cloths or in labelled spray bottle(s). All prep surfaces must be sanitized prior to initiating any food prep in the morning, every 2 hours and after each possible contamination during operation.

Observation: Few mouse droppings observed from the back equipment storage room. Pictures taken.
Corrective Action(s): Ensure these are all removed and affected areas are sanitized using 1000ppm chlorine (20ml bleach per 980ml water). Monitor this area. If new droppings observed, contact the professional pest control company to have the area inspected for possible entrance.

Routine inspection conducted:

-Handwash station adequately supplied. Sink re-sealed after the last routine inspection. Good.
-Refrigeration temperatures within requirement; Hot-holding temperature within requirement.
-Temperature monitoring system in place.
NOTE: Ensure to keep the lid - pizza prep cooler closed when not in use.
-General food storage practice satisfactory.
-High temperature dishwasher achieved 74.5'C at the plate level after final rinse.
-Washroom handsink equipped properly.
-General sanitation satisfactory, except the floors from the dry storage room.
NOTE: Ensure to clean/remove dust and debris from floors on a regular basis. Pull out all crates and clean.
