Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Food contact surfaces (e.g., utensils) are not adequately sanitized as a result of low temperature dishwasher not being able to dispense sanitizer.
Correction: All food contact surfaces are to be sanitized manually. Reviewed manual dishwashing procedure with the operator. The operator may use the dishwasher to wash the dishes and manually sanitize the dishes in the 2 compartment sink. Correct this by: immediatley.

Code 303 noted on Routine inspection # AHEN-C6WT4X of Sep-16-2021
Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Dishwasher was dispensing 0 ppm chlorine sanitizer residual at the plate level.
Correction: Repair or re-service the dishwasher to ensure it dispenses at least 50 ppm chlorine sanitizer at the plate level during the final rinse cycle to sanitize food contact surfaces; Correct by September 17, 2021. Facility is providing take-out only. In the interim, continue to only provide take-out only and ensure all preparation utensils and food contact surfaces are manually washed through the dishwasher and then manually immersed into 100 ppm chlorine sanitizer in a compartment of the two compartment sink unit for at least two minutes before being air dried. Staff setup 100 ppm chlorine sanitizer in a sink unit during the inspection.

Follow up inspection:
-Dishwasher final rinse chlorine sanitizer residual was at 100 ppm (minimal required: 50 ppm) at the plate level.
-Operator stated they had replaced the chlorine sanitizer bottle that is connected to the sanitizer line of the dishwasher.
-Chlorine test strips were available on-site. It was reviewed with the Operator that the dishwasher final rinse chlorine sanitizer residual should be regularly monitored each day of operation to ensure there is at least 50 ppm chlorine sanitizer dispensed during the final rinse cycle to adequately destroy harmful bacteria and viruses.
-Ventilation hood panels had been cleaned to remove build-up of debris.
