Observation (CORRECTED DURING INSPECTION): Temperature of the food items in the steam table, vegetable balls in curry, chicken in sauce, samosas were not hot enough (120-135F/49-57C).
Corrective Action(s): Items were reheated during the inspection. Ensure food items are throughly reheated before placing in a pre-heated steam table. Ensure there is enough hot water in the wells.

Observation (CORRECTED DURING INSPECTION): Clean buckets are being stored in the handwashing station in the dishpit area.
Corrective Action(s): Ensure the sink is kept clear so that it is always accessible for handwashing. Wash hands before touching clean dishes.

Observation: Mice droppings noted.
Corrective Action(s): Remove the droppings and sanitize the area. Contract with the previous pest control service has been terminated. A new one has been hired and will carry out pest control starting next week. Thoroughly sanitize all counters and food contact surfaces at the beginning of each day.

Observation: Rear loading bay doors were left wide open and unattended. Sliding door between the ghee production area/kitchen and the loading area is broken and left open. Butter residue is coating the bottom of the
Corrective Action(s): Keep the loading bay doors shut except during active loading. Repair sliding door and keep shut. Clean the pellet.

Comments

Obtain chlorine test strip to check the strength of the bleach solution used for sanitizing.
The kitchen was generally clean. The interior of the gutter floor drain is clean. Operator stated that it is hosed down nightly and a deep clean weekly.
Obtain a food probe thermometer for checking inside temperature of food items (meatballs...etc). Obtain a battery for the IR thermometer. Resume recording temperature on a log sheet. The last entry was mid March.
