206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation: 1. Chicken wings stored at the island hot holding unit measured with an internal temperature of 43C. The unit was not turned on at the time.
2. Pizza stored under ambient room temperature was not time tracked and records were not available for review. Internal temperature measured at 26C.
3. Rotisserie chickens stored at the hot holding units measured at a temperature of 53C. Time tracking available however one chicken stored in the unit already passed the 4 hours limit.
Corrective Action(s): Aforementioned foods were all discarded at the time. Ensure hot foods are stored at 60C or above. Alternatively, time track the food properly with records available for review.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): High temperature dishwasher registered 67C at the plate level. This temperature is not sufficient to sanitize utensils and equipment properly.
Corrective Action(s): Set up the manual dishwashing at the 3 compartment sink. Manually wash and sanitize all utensils and food equipment until dishwasher is service and works properly.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hand washing station near the cash register was obstructed by fruit boxes and the paper towel dispenser was empty.
Corrective Action(s): Do not obstruct hand washing stations for easy access and refill the paper towel at the dispenser.

Observation: 1. High temperature dishwasher did not work properly.
2. Hot holding unit for rotisserie chickens unable to maintain food at 60C or above.
Corrective Action(s): 1. Service / fix the dishwasher to ensure at least 71C is achieve during the final rinse cycle at the plate level.
2. Service / fix the hot holding unit to ensure hot food can be maintained at 60C or above at all times.

- Other hand washing station provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quats sanitizer available in spray bottles and from the dispensers. Ensure bottles are stored close to each work station.
- 3 compartment sink available for manual dishwashing.
- Food storage practices satisfactory.
- Temperature records maintained and available for review.
- General sanitation satisfactory.
- No pest activities observed at the time.
