Observation (CORRECTED DURING INSPECTION): Hot dog sausages on the hot dog roller/ warm holding unit measured to have an internal temperature between 48C to 51C. Staff indicated that the hot dogs heated to 74C and then were placed in the warm holding unit around 45 minutes ago
Corrective Action(s): Reheat the hot dogs to 74C prior to putting in the warm holding unit that can maintain a temperature of 60C or warmer

Comments

General observations
- Handsinks equipped with hot and cold running water, liquid soap, and paper towel
- Bleach sanitizer measured to be at 100ppm
- Two compartment sink available for manual dishwashing
- Chicken strips and french fries come from an approved source and are made to order. Staff demonstrated with a probe thermometer that the chicken strips were cooked to an internal temperature of 74C
- All coolers were measured to be at 4C or lower
- All freezers were measured to be at -18C or lower
- Temperature logs available and maintained
- One staff onsite has valid and current FOODSAFE Level I certificate
