304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings were found throughout the front of the facility. Facility is currently serviced by a professional pest control operator on a monthly basis.
Corrective Action(s): Clean rodent droppings and sanitize all affected areas. Monitor for continued pest activity and contact professional pest control operator as needed. To prevent further infestation ensure the following are carried out: maintain facility is a clean and sanitary condition, locate potential pest entry points and seal entry points, store foods off the ground and in pest proof containers, remove any standing water from the facility, and remove garbage from the facility on a nightly basis.

Observation: Mould growth was found on the shelving units in the walk-in cooler.
Corrective Action(s): Ensure cooler shelving units are cleaned and sanitized on a regular basis to prevent the growth of mould.

Observation: Back paper towels dispenser is not working by the 3-compartment sink.
Corrective Action(s): Repair paper towel dispenser. Single use paper towels were placed by the 3-compartment sink.

Follow Up to "Critical" Violations Noted on Previous Inspections (if applicable): No corrections entered
Comments

-Walk-in cooler was at 3C.
-Walk-in freezer was at -18C.
-Both sandwich coolers were at 4C.
-Hot holding was greater than 60C. Foods are cooked/reheated to greater than 74C prior to hot holding.
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Quats sanitizer was dispensing at 200ppm.
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pail and spray bottle were at 200ppm.
-Slicers were in use at the time of inspection.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and hot air dryer.
-FOODSAFE Level 1 valid until May 6, 2022.
