203 - Food not cooled in an acceptable manner [s. 12(a)] Observation: Baked potatoes wrapped in metal foil were stored in the reach-in fridge. Corrective Action(s): These potatoes must be discarded. When storing baked potatoes, the foil wrap must be opened to allow access to oxygen to prevent the growth of botulism producing bacteria which survive the baking process and grow in a reduced and non-oxygen environment (ie. wrapped in foil after baking). Violation Score: 5

Generally well maintained and operated. Sanitation is very good. Refrigeration measures < 4 C. Freezer temperatures measure < -18 C. Spray sanitizer measures 200 ppm Cl. High-temperature dishwasher not in use at time of inspection. Premises complies with the Transfat regulation.
