Observation: Dishwasher tested at 0ppm Cl. Dishwasher logs ceased in mid July.
Corrective Action(s): This is the 2nd time in two routines that the dishwasher has not been able to meet sanitation requirements. In the interim, you are to manually sanitize dishes in the sink using the following method:
1. Wash dishes in the dishwasher
2. Fill 1 compartment of sink with 100ppm Cl solution and fully submerge dishes. Allow dishes to soak for 2 minutes.
3. Air Dry

100ppm Cl = 1 tbsp bleach for 4L water. Be sure to use your test strips to verify 100ppm Cl concentration before sanitizing.

Temperature logs have also not been maintained. Be sure to maintain your temperature and dishwasher logs twice daily. Place the logs in a more visible location (i.e. on a clipboard on the wall)
Ensure only smooth, impermeable, and easily cleanable materials are in the kitchen - fabric ottoman is to be removed.
Ensure you keep the inspector updated on your progress with the dishwasher. If no signs of progress, a correction/closure order may be issued.
