Observation (CORRECTED DURING INSPECTION): Knife and pie lifter were used (white residue still present on knife and water was cloudy) and stored in container with water at room temperature.
Corrective Action(s): Knife and pie lifter must be cleaned after each use in the dishwasher (or using the three compartment sink method) or they must be stored in ice between uses to prevent the growth of bacteria.

Observation (CORRECTED DURING INSPECTION): No sanitizer was prepared or available at the start of the inspection. One bottle that was labelled as sanitizer, staff stated that it was actually windex.
Corrective Action(s): A bleach sanitizer made up during inspection. Keep this available at all times (either in a spray bottle or in a bucket) when restaurant is in operation.

Observation: Build-up of grease and food debris behind cooking line area, especially in the corners.

Observation: Three trays of food found in freezer that were covered with garbage bags and one bucket of precooked deep fried foods found lined and covered with newspaper.
Corrective Action(s): Garbage bags and newspaper are not intended to be used in direct contact with food. Remove these and replace with food grade materials such as tin foil or food grade plastic wrap. Due: Today.

General observations:
- Coolers ≤4°C, Freezers ≤ -18°C
- Cooling reviewed, fans used in the back to help cool large batches of sauce faster once it is taken off of the stove and then cold water bath used to cool down further before being transferred to the cooler
- Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
- High temperature dishwasher sanitizing at ≥71°C
- Low temperature bar glass washer sanitizing at 50ppm chlorine
- Two compartment sink stocked with dish soap, sanitizer, hot and cold running water
- Equipment appeared to be in good working order
- General sanitation and maintenance is satisfactory
- No signs of pest infestation noted
- Thermometers present
- Temperature logs maintained and no issues with equipment have been noted
- Staff with FoodSafe (or equivalent) present.
- No concerns with staff hygiene or food handling noted during inspection
